Appellation: Napa Valley
Varietal Blend: 100% Syrah
Soil: Volcanic soils, strong gravel outcroppings with 20% serpentine rock and shale deposits.
Harvest: Manually harvested. Picked at optimum ripeness and hand sorted in small bins.
Technique: The fruit was destemmed and gently crushed into stainless steel fermentation tanks. Inoculated with Pasteur Red yeast, fermentation completing in 8 days. Pumped over twice daily, the wine was then held on the skins for an additional 12 days. Gently pressed in a bladder press, then racked off to barrel. Racked quarterly to allow for natural clarification.
Aging: Aged for 18 months in barrels of which half were new. 74% French oak, 20% Hungarian oak and 6% American oak. Bottled May 17th 2007.
Tasting Notes: Aromas of ripe plum, cranberry, chocolate, and roasted coffee. Earthy notes of pepper lead tp rope black fruit flavors. Integrated tannins show the way to a long, silky finish.
